If you want the fresh quality farm-sourced Greek olive oil experience I recommend you use up your EVOO in under one year, but realistically you'll probably be fine with 18–24 months from harvest, provided it is stored properly. You see it's more like fresh farm produce, than wine.
Our single-origin extra virgin olive oil is made by mechanically pressing fresh olives and extracting the oil without heat or chemicals. From the moment it is produced, the oil begins a slow process of oxidation that gradually reduces its freshness, aroma, and flavor. Premium Greek extra virgin olive oils are naturally rich in antioxidants and polyphenols, which help protect the oil and preserve freshness longer, but... the fresher it is the more vibrant it is. That's why we only carry SEASONAL olive oil with transparent harvest times.
We package our EVOO's in air and light tight tins so this helps immensely to keep it fresh. Once you get it home please keep the cap on between uses and store it away from heat. I recommend you drink/use it within a few months after opening. The oil remains safe to consume beyond that, but its flavor, aroma, and nutritional compounds gradually decline.
Basically a high-quality extra virgin olive oil can remain enjoyable for up to two years when stored properly, but the freshest oils deliver the best flavor and aroma. Fresh olive oil is one of nature's most remarkable foods. When treated with care, it rewards you with vibrant flavor, rich aroma, and the authentic character of the olive grove from which it came.
